Shoshana Lerner’s Chocolate Cookies for Passover


Shoshana Lerner’s recipe for Passover appropriate chocolate cookies:

16 oz. melted chocolate chips
4 eggs
1 ‡ c sugar
4 tbs. oil
1 tbs. dry coffee granules
º tsp. salt
1 tsp. vanilla extract
‡ c potato starch
4 ‡ c ground almond or walnuts

Beat eggs and sugar with mixer until well blended. Add melted chocolate, oil and rest of the ingredients. Batter should be a bit on the stiff side, if loose add more nuts. Roll cookie into a ball then flatten and put on cookies sheet. Bake in a 350 degree oven for approximately 12 minutes.
